Removing the seed culture at 3 hours is correct and it may have been a bit softer or more liquid which should be ok.

To thicken your yogurt for a creamier store bought texture you can add tapioca flour chia seeds or agar agar. Add a sweetener before fermenting. It s not for adding a sweet flavor to the yogurt.
